Here's a low cost takeaway style meal you can make at home and save money at the same time.
Serves 4
Ingredients
1 tbsp walnut oil
500g chicken breast cut into small chunks
100g spring onions, white and green parts finely sliced separately
3cm ginger, peeled and grated
3 garlic cloves, peeled and grated
1 tbsp chilli oil
3 tbsp soy sauce
3 tbsp crunch peanut butter
1 chicken stock cube
280-300g dry weight brown rice
1 tsp crushed chillies
Cook the brown rice according to the pack instructions. Whilst it takes longer than white rice, you have a lovely nutty texture, and a lower impact on our blood glucose compared to white.
Heat the oil in a work and fry the chicken for 7-8 mins or until brown.
Add the white parts of the spring onion, ginger and garlic to the pain and stir for 2 mins.
Add the chilli oil, soy sauce, peanut butter, and chicken stock and stir to combine and gently simmer for 3 mins.
Add the cooked brown rice, and mix thoroughly. Serve with the sliced green spring onion and crushed chillies. Enjoy!
